Dysphagia care training & texture modified foods are topics that arise daily in health & social care facilities, even more now with the introduction of the IDDSI framework. Whether it’s a Residential Aged Care Facility asking for training for all their staff members, or an individual looking to improve their dysphagia care skills, our course will give you the knowledge and experience to bring safe nutritious and appetising meals for those who need it.

Depending on if your are ordering as an individual or as an organisation, we offer 3 options to assist you with implementing IDDSI:

  • Option 1 : Online course only (for individuals and organisations): 3h hours of learning covering dysphagia, IDDSI and Nutrition theory and assessment. Shop the course here
  • Option 2: Group-based practical workshop Food and Drink Testing only (for organisations only): It includes the online learning + flow testing of texture modified foods and drinks delivered by a Certified Speech Pathologist. Enquire here
  • Option 3: Group-based practical workshop Food & Drink Production & Testing (for organisations only): It includes the online learning + preparation, production and flow testing of texture modified foods and drinks as per the 8 levels of the IDDSI Framework. Enquire here

Duration

Option 1: 3h for online theory

Option 2: 3h online theory + 2h workshop for food & drink testing only

Option 3: 3h online + 4h for full practical workshop 

 

Price

Option 1: $75 per learner for online theory only 

Option 2: : $2 200 for online theory + group workshop of a maximum of 20 participants
Option 3: $3 000 for online theory + group workshop of a maximum of 20 participants

MORE INFORMATION ABOUT THE FOOD AND DRINK TESTING WORKSHOP (option 2)

FOR WHO?

Health and Social Care organisations or catering service providers that are already producing Texture Modified Foods and Drinks but are unsure how to test food and drink items and implement the new IDDSI standards.

Please note: Individuals that wish to participate in this course should contact the Academy – we may be able to place you in an upcoming Workshop close to you.

DELIVERY MODE & LOCATION
  • Includes the Online Course (Option 1), which is self-paced.
  • The Workshop is delivered as a group classroom-style session over approximately 2 hours.
COURSEWARE

SESSION PLAN

Workshop information:

  • Review of Dysphagia & IDDSI standards,
  • Viewing of Speech Pathology IDDSI videos.
  • Hands-on testing of food and fluid compliance with the new IDDSI Framework.
  • Can include some testing on items from your existing catering menu.
  • Delivered by a Certified Practicing Speech Pathologist with experience working in aged care.
LEARNER REQUIREMENTS
  • Food production PPE as per facility requirements.
  • Should have completed online theory course prior to workshop.
TRAVEL AND ACCOMMODATION COST
  • We have Speech Pathologists available to deliver the Workshop from service centres in the following locations:
    • Brisbane
    • Sunshine Coast
    • Sydney 
    • Melbourne
    • Adelaide
    • Perth
  • For workshops delivered beyond the service centres, travel will be charged at $75 per hour after 30 minutes from the service centre.
  • Kilometres will be charged at $0.90/ km after 30 km from the service centre.
CERTIFICATE OF COMPLETION

The learner will get a ‘Certificate of Completion’ from the Academy – this is a non-accredited certificate which will be emailed as a PDF to successful candidates. The certificate will include first and last name the candidate, with the date of course completion.

FOR WHO?
  • Health and Social Care organisations or catering service providers that are NOT producing Texture Modified Foods and Drinks and are unsure how to test food and drink items and implement the new IDDSI standards.

Note: Individuals that wish to participate in this course should contact the Academy – we may be able to place you in an upcoming Workshop close to you.

DELIVERY MODE & LOCATION
  • The Food and Drink Production Workshop is delivered over 6 hours in your food production/kitchen facilities
  • Includes the Online Course (Option 1), which is self-paced
  • Includes the Food and Drink Testing Workshop (Option 2) which is delivered as a group classroom-style session.
DURATION OF THE WORKHSOP

1-day (4-hours): 9am – 1pm, including 1 hour for breaks and lunch, or as otherwise requested by facility.

SESSION PLAN

Content:

  • Review of Online theory content
  • Preparation and production of a range of Food and Drinks as per the 8 levels of the IDDSI Framework.
  • Food and Drink flow test measurement

Inclusions :

  • Moulds, thickening agents and recipes

Non-inclusions:

  • Raw food and beverage items
  • Blast-chiller
LEARNER REQUIREMENTS
  • Food production PPE as per facility requirements.
  • Should have completed online theory course prior to workshop.
TRAVEL AND ACCOMMODATION COST
  • No charge if this Workshop is delivered within 50km of the Melbourne, Brisbane or Sydney CBD’s
  • Where a Workshop is delivered in excess of 50km from the Melbourne, Brisbane or Sydney CBD’s then all travel and accommodation costs for the Chef/Cook will be passed onto your organisation, plus any travel and accommodation costs applicable to Option 2 .
